Do you know what I came across today as I managed to duck out for a quick walk during lunch hour? I was heading out to Myer for a quick pit-stop and nearly died when I saw a sign by the lifts that said, “Christmas Trims Level 6”!

CHRISTMAS! It’s the start of spring and already the yuletide season reminder is upon us. Holy garland and smokes, Santa.

But it was this reminder that Christmas is only 3 months away that made me think of this Playground dish created by The Boy.

The connection? Christmas colours of course! Pescatarians would approve of this dish.

I would like to name this dish A Walk in Spring with Ling 🙂

The elements on the slate are:

Pan Fried Ling Fillet (marinated with Paprika, Cayenne Pepper, Salt & Pepper)

Broccoli Puree (smeared to represent “water splashes” as though the fish is jumping into the ocean)

Broccoli Ribbons

Broccoli Heads

Pan Fried Oyster Mushrooms

Orecchiette

Tobiko (Flying Fish Roe)

Blood Orange

Don’t the colours just pop out at you!

This dish was light and none too heavy. I loved the burst of sweetness and saltiness from the blood orange and tobiko, the texture differences of the broccoli and the charred flavours of the fish.
