SUMMER IS HERE!!!!!
Is anyone else excited? Apparently summer is so hot right now and is all the rage 😛
Unfortunately, I’m one of those people who do not function well at all in the heat and just turn completely stupid. My brain loses its function, I get all lethargic and itchy, and all I want to do is curl up under the AC unit.
HOWEVER!
I do have a cool summer salad to save the day! *CLAPYOURHANDSTOGETHERNOW*
Ever since I started my Paleo (more Faileo often than not) diet, I’ve started increasing my intake of fresh vegetables. As a result, a once sworn carnivore, I’m beginning to crave my salads when I’ve been away from them too long (OMG, who am I?)
One of my favourite salads to have is so simple and refreshing, I thought I’d share it with you for your next meal.
The beauty of this salad recipe? You can use almost any vegetable in it and just replace as you like 🙂
Avocado & Celery Summer Salad Recipe
Ingredients:
*All ingredient quantities may be altered depending on your tastebuds
4 stalks of Celery (sliced)
1 Cucumber (cubed)
1 Avocado (mashed)
A bunch of Coriander (chopped)
1 Birds Eye Chilli (sliced) – can be adjusted to suit level of heat preferred
1 Lemon wedge
Salt & Black Pepper to taste
Procedure:
Prepare the ingredients as describe.
The avocado should only be mashed when you are ready to toss everything together (as it will brown if left alone for too long).
Once the avocado is mashed, season with salt and black pepper to taste. Squeeze in the lemon juice and mix thoroughly.
Toss in all other ingredients and mix together.
Serve fresh!
And it is that simple. A lot of the work comes from actually chopping and slicing the vegetables, but if you would rather use a food processor to chop them up, feel free! (I tend not too, as I don’t want to bruise the vegetables too much).
I have added in baby cos lettuce and mint when I was out of coriander, and it worked just as well. So feel free to experiment with different types of vegetables.

The easiest one I like to make is just a Shell Pasta Salad:
Shell pasta, cooked, then chilled. Mix in diced: mushrooms, tomatoes, capsicum. Then stir through the dressing (which consists of LOTS OF: mustard, mayonnaise, curry powder, cracked pepper)
Easy. Delicious.

Our summer salads this year have consisted of grab 3-5 vegies from the fridge, chop, slice, dice, grate as required, add a pinch of salt and pepper, grate a small amount of cheese on top, dress if desired – all assembled straight from the chopping board onto the plates, no tossing bowl required.

Oh yum-mo! I love anything with avocado really 😀 What’s the Paleo diet? I was once a sworn carnivore as well but doing this fast has made me fall in love with salads more over the time :P.

Paleo is pretty much no carbs, legumes, wheat, grains, etc… It’s actually coeliac and GF friendly 🙂
Yay yay yay!! Salad is the bestest! I usually just chop up any veggies I have an eat them raw (love raw cauliflower 🙂 ) and also toss with whatever I have on hand (dulse, nutrtional yeast, avocado, pesto, etc…) but for a fancier salad, I like watermelon and feta with mint and quick-pickled red onions 🙂

This recipe is perfect! I have all these ingredients left over from Australia Day and my brother’s birthday that I didn’t know what to do with them. It’s a wonder that you can still inspire me to make something even when you’re in Malaysia 😛

I LOVE salads! I’m definitely giving this one a go.
I love Nigella Lawson’s cold soba noodle salad. It’s quick, cheap and ridiculously easy to put together. Plus, you can add your choice of protein – chicken, tofu or whatever. The only issue is that you’re probably not allowed to eat it on your paleo diet as buckwheat is a grain (though granted, not a ‘nasty’ one) so maybe you can make allowances? 😀
