Remember when bananas were friggin’ expensive?

Remember when everyone knew you were rich or insane if you were caught paying $2.50 for one banana? Yup. ONE BLOODY BANANA!

Thankfully, those dark days are behind us and we can once again rejoice on the over abundance of the fleshy long (curved) yellow fruit that springs forth (did your mind just go there?).

In celebration of my love with bananas (hah!), I’ve previously posted a few banana related baking recipes (i.e. Banana Bread and Banana Muffins with Cream Cheese Frosting).

A couple of weeks back, I had a few sad looking black bananas which I had kept in the freezer. Summer this year has wrecked havoc on keeping fruits and veggies out in the open air for long periods of time.

With a tub of Greek Yoghurt in hand, I wondered if I would be able to replicate something healthier in regards to banana bread.

This resulted in a quick google search on available recipes, and adapting them to suit the items in my pantry ๐Ÿ™‚

Greek Yoghurt Banana Bread Recipe
(Recipe is adapted from various Greek Yoghurt Banana Bread recipe’s and Ms I-Hua’s Banana Bread Recipe)

Ingredients:

Wet Ingredients
3 ripened Bananas (mashed)
2 Eggs
1 cup of Greek Style Yoghurt
1/2 teaspoon Vanilla Extract

Dry Ingredients
125gย Butter (soften)
1 1/2 cups of Plain Flour
1/2 cup of Brown Sugar
1 teaspoon of Baking Powder
1 teaspoon of Nutmeg (ground)
1 teaspoon of Cinnamon (ground)
1/2 teaspoon of salt

Procedure:

Preheat oven to 180 degreesย Celsius.

In a mixing bowl, whip butter and sugar until it forms a creamy texture.

Beat in the eggs and vanilla extract to form a smooth consistency. Add in the mashed bananas, yogurt and all dryย ingredientsย and mix well.

Pour into a greased bread loaf pan.

As an option, you can sprinkle/dust more cinnamon powder on top of the mixture for a stronger hit of the spicy aroma.

Bake for 35-45 minutes. Check with a toothpick (or a satay stick). If the stick comes out smooth and clean, the bread is done.

Let rest on a wire rack for around 10-15 minutes. Serve fresh with butter, more yoghurt or nutella (or cream cheese!).

The bread was an instant hit at work and everyone was surprised that I had made it with Greek Yogurt.

It was also flatter than the normal banana bread I make, but certainly more moist.

A luscious and an indulgent afternoon tea delight ๐Ÿ™‚
